After being caught, the fish is cleaned by taking intestines out, mixing with salt and thengrilledon the clamps. The fish is sandwiched byfresh bamboo tones and thengrilled on live coals. When putting it on the charcoal for a few minutes, you can hear the hiss of fish and smell the emissive scent. You can savor fish at the bank of the lake with spices such as "doi” seed, chili, salt, lemon and sour bamboo shoots; looking at a view of clouds and water space that gives the feeling of relaxation and interest.

They aremaking the brand name of Da River fish. Many other types of fish including Clarias fuscus, Crucian carp and eel in Da River have both of nutritional and therapeutic value.

According to a number of scientific investigations in recent years, there are about 174 species of fish, belongingto 85 genera, 19 families and 6 orders within the Da River area. In there, the carp has the richest composition with 123 species, belonging to 59 genera, accounting for 70.6% of the total species. The next is mudfish with 28 species, belongingto 12 genera, accounting for 16% of the total species. Especially, 19 species of high economic value, 8 species of precious fish including Bagarius yarrelli, Semilabeo notabilis, Hemibagrus and Sinilabeo lemassomi are listed in the red book. There are 13 fish species playing an important role in the economic life of the local people withinthe Da River area. They are Ctenopharyngodon idella, Hypophthalmichthys, Cyprinus carpio, Hypophthalmichthys nobilis, Bagarius bagarius and so on. The province is implementing the management and good exploitation of provincial potentiality and making the trademark of Da River fish in association with tourism development and improvement of the people’s life within Da River reservoir./.
